Carrot Pudding

Ingredients

Pudding

  • 1 cup Carrot grated
  • 1 cup Potato grated
  • 1 cup Flour, All Purpose White
  • 1 cup Sugar, White
  • 1 cup Raisins
  • 1 cup Lard
  • ½ tsp Cinnamon
  • ½ tsp Nutmeg
  • ½ tsp Cloves
  • 1 tsp Baking Soda

Sauce

  • 1 ½ cup Sugar, Brown
  • 2 tbsp Cornstarch heaping
  • 1 tbsp Butter
  • 1 tsp Vanilla Extract
  • ¾ cup Water boiling

Instructions

Pudding

  • Cream sugar and lard. Add carrots and half of the potatoes.
  • Mix raisins in half the flour, add spices to the other half add to mix, add raisins to mix
  • Last add the remaining potatoes to which 1 tsp of baking soda has been stirred into
  • Bake for about 3 hours at 350°F sitting in a dish of water

Sauce

  • Mix sugar and cornstarch, add water cook to thicken. Add vanilla and butter
