Carrot Pudding
Ingredients
Pudding
- 1 cup Carrot grated
- 1 cup Potato grated
- 1 cup Flour, All Purpose White
- 1 cup Sugar, White
- 1 cup Raisins
- 1 cup Lard
- ½ tsp Cinnamon
- ½ tsp Nutmeg
- ½ tsp Cloves
- 1 tsp Baking Soda
Sauce
- 1 ½ cup Sugar, Brown
- 2 tbsp Cornstarch heaping
- 1 tbsp Butter
- 1 tsp Vanilla Extract
- ¾ cup Water boiling
Instructions
Pudding
- Cream sugar and lard. Add carrots and half of the potatoes.
- Mix raisins in half the flour, add spices to the other half add to mix, add raisins to mix
- Last add the remaining potatoes to which 1 tsp of baking soda has been stirred into
- Bake for about 3 hours at 350°F sitting in a dish of water
Sauce
- Mix sugar and cornstarch, add water cook to thicken. Add vanilla and butter
