Bacon-Rosemary Paste

Ingredients
- ¼ cup Bacon Drippings
- 1 clove garlic minced
- 1 tbsp Rosemary dried
- 1 tsp Mustard, Dijon
- 1 tsp Salt, Coarse
Instructions
- Melt the bacon drippings in a small skillet over medium heat. Stir in the garlic and cook for 1 minute. Stir in the rosemary, mustard, and salt and remove from the heat. Let sit until cool and beginning to firm.
- Use right away or transfer to a covered container and refrigerate for up to a couple of weeks. Rub the mixture heavily on large cuts of pork and then massage it in well. Allow the seasoned meat to sit for at least 45 minutes at room temperature, or up to overnight wrapped or covered in the refrigerator, prior to cooking.
